weekend roundup

Friday was a laid back evening. Rader P and I watched The 5-Year Engagement which was quite funny. El Jefe read his book because “it is a movie with a wedding in it, therefore it is a chick flick.” I think there is a flaw in his thought process…last time I checked, The Hangover was a movie with a wedding in it and I don’t really think it qualifies as a chick flick. Oh well. Rader and I enjoyed it.

Saturday was very busy. I made Cheeseburger soup, salad, and garlic bread for my friends who’s little girl is going through her 6th(?) round of chemo. Maybe 7th. Either way, too much chemo for one sweet little body to go through. There is a Facebook page dedicated to her progress and they post tons of pics and updates if you’re interested in checking out the prettiest little princess on earth.

I also made some yummy crockpot chicken.

I got my new kicks in and planned to go walking DOWN BY THE RIVER, but the rain stopped me, so I had wine with Robyn instead.

Oh and my sweet little piggies were devastated, humiliated, and shat upon this weekend by Alabama. Dammit Bobby! Why’d you have to hire your little bimbo?!?!?! That’s okay, my spirit is broken, but not gone.

Sunday was a day of shopping for great deals at JcPenney. Ian and I rocked out some bargains and had a good time, to boot. Then I forced myself to go to the gym because it was raining again. And I have bootcamp tonight so I needed to make sure I got in a little exercise this weekend.

Boardwalk Empire is back! So crack tv night is almost restored.

One day at a time. Man, why can’t cheese dip make me lose weight?

Bootcamp starts tonight. El Jefe thinks he should go to throw rocks at me, you know, for motivation. haha. I’m thinking I don’t really need the assistance.

I’m at FCR today, talking about the Little Rock Half Marathon.

I’m looking forward to adding to my medals…I’m hoping it’s made of cheese and awesome.

I tried my first Pinterest recipe last night…and boy was it YUMMY!

We had homemade Mac and Cheese, bacon-wrapped Talapia, and stuffed crab shells. OMG. So freaking good. (FYI, the stuffed crab shells were from the seafood deli in Kroger. On sale for $1.00 each with Kroger card. It was a damn good deal and mighty tasty.) It was the only thing on our plate that I didn’t fix last night. Now Jefe knows why I love watching cooking shows like Top Chef so much. I get ideas and then I CREATE! Cooking…it’s food science!

I can’t wait to get home and eat some more Mac and Cheese. And now that I’ve made the recipe once, I have some ideas on how to tweak it. I used only Half and Half in the recipe and I think I needed to mix it up with milk. It’s very rich…and would be fantastic with lobster, scallops or crabmeat (or all of the above). Next time I’ll probably leave out the Dijon mustard. I didn’t use much, but it was still a pretty strong flavor.

In Itty Bitty Kitteh news…she still has no name…but she is settling in quite nicely.

Ruby is apparently still circling her. Jefe says she’s like a little annoying black shark. I guess new kitty smell is addictive…

weekend recap

  • There were boys in the house all weekend.
  • It stormed Saturday and I slept late.
  • I met my BFF from high school at US Pizza for a beverage and to catch up.
  • I made country fried steak, gravy, and hashbrowns for dinner Saturday night.

  • I spent more money than I should have at Walmart (big surprise)
  • I almost went on a killing spree at Walmart (big surprise part deux)
  • The only thing that saved everyone in Walmart from my bloody wrath was the fact that I didn’t have a gun, machete, or a flamethrower with me. Although I did (briefly) consider going to tools and grabbing something pointy and stabby…the only thing that stopped me is that I would have had to stand back in line for probably another 30 minutes. Also, there would have been lots of blood and probably suicide by cop so I just decided to seethe.
  • Ian and Ruby make a cute couple.
  • There was lots of quality time with John Deere on Sunday.
  • Laundry
  • Goofing off
  •  Sunday is crack-tv night…True Blood and The Newsroom.
  • And wine was consumed.

Okay, so I got these new camera apps yesterday and I’m kind of developing a habit. But these apps are cool and so whatever. Shut up.

This morning, I decided to take pics of my blueberries and almonds just to see how different each lens filter was using the “Fisheye” camera.

Yes. I have a problem. I’m aware of said problem and I’m working on it. (by upgrading the apps to the paid versions so I can have access to even MORE awesome… I mean, nothin.)

Boy I’m glad it’s Wednesday! I have a dinner date tonight with two very dear friends and I think it will be a dandy time.

Especially since I’m not the one cooking. 🙂

Speaking of cooking…I grilled some mean chicken last night. Mmmmm. I love grilling on Big Bertha. Charcoal is the only way to go…unfortunately, (or maybe fortunately) when I’m finished grilling, I smell like campfire. I guess the level of goodness depends on how outdoorsy you are. If you like camping, then I was your girl last night. Hah.

Rader is headed out to North Carolina for a soccer tournament. I’m sad I can’t be there, but I know he’s gonna kick some major butt.

Race day was fantastic! Meet Cal Dela Casa, aka Callie. She is my friends’ horse and she finished in a dead heat in the 3rd race. It was amazing to see.

Also, I bet on her, so it was amazing to cash in. Friday was a winning day for me, though I don’t really bet enough to win big, I did come home with more money than I left with.

 I wore my lucky hat. Well it’s lucky now, anyway.

In other news, I made sum YUMTASTIC  fish tacos on Saturday and some crock pot chicken yesterday that made me wanna slap my momma. (Shhh. don’t tell her I said that.)

Today is beautiful, I’m feeling all a-sparkle, and you guys better be twinkling along with me. That’s an order.

I really don’t have anything substantial to discuss today. Not that I ever do, but sometimes I like to kid myself. (okay, all the time I kid myself. Shut up. It’s my blog. If I want to be in denial, it’s allowed.)

I’m having lunch with my bestie from high school today. SUSHI! I’m very excited about this. So excited that I even put on make-up today.

I’m also wearing underwear. <–You’re welcome.

Maybe today will be a wine lunch…I’m off the rest of the afternoon…may as well make the most of it. (as if being off work really matters…Oh wait, sure it does…it’s the difference between 1 glass and 1 bottle…I mean, nothing.)

OH and check out the newest OMG I WILL DIE IF I DON’T HAVE THIS SOON item. My friend TTB sent it to me last night. Look out, Target. I’ll be there later to collect my awesome.

Mmmmmmm

I made good foods last night. Bacon-wrapped Rosemary Chicken and roasted potatoes with wilted garlic spinach. I would have gotten marked down for the plating, but as for the taste, I might have even pleased Chef Ramsey. Maybe.

And then it put me in a coma. I’m not exactly sure what time I started dozing on the couch, but it was early. I’m sure I was mouth-breathing and drooling into Lake Melf when El Jefe woke me up and suggested I make the bed my new home.

The weekend is here y’all. Get your Sparkle On. I had to fight off a couple of Twi-hards but I finally managed to kill a sparkle-pire and gain my sparkle back. I hope you’re wearing your shades today…because I’m shining bright!

Today is National Cherry Cobbler Day!

So let’s all pop our cobbler cherries together! How awesome would it be if we all ate cherry cobbler today? I’m pretty sure no matter how bad your day is, if you have a slice of cherry cobbler, it’s gonna get better. (admittedly, cherry cobbler is no apple pie, but it’s a good runner up…)

Here’s a tried and true cherry cobbler recipe from Southern Living (printed in 1999). Yes, this is a recipe that I have in my possession from my Southern Living days. It’s a good one. Enjoy.

Ingredients
  • 6 cups pitted fresh cherries (about 2 1/2 pounds)*
  • 1 1/2 cups sugar, divided
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1/2 teaspoon red liquid food coloring (optional)
  • 3 tablespoons butter or margarine
  • 1 tablespoon grated lemon rind
  • 1/4 teaspoon almond extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter or margarine
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Ice cream
Preparation
  • Bring cherries, 3/4 cup sugar, cornstarch, 1/2 cup water, and, if desired, food coloring to a boil ina medium saucepan, stirring constantly. Boil, stirring constantly, 1 minute. Remove from heat; stir in 3 tablespoons butter, lemon rind, and almond extract. Pour into a lightly greased 11- x 7-inch baking dish.
  • Combine remaining 3/4 cup sugar, flour, baking powder, and salt in a large mixing bowl. Add milk, 1/4 cup butter, and vanilla, and beat at medium speed with an electric mixer 2 minutes. Add egg, and beat 2 more minutes. Spoon batter evenly over cherry mixture.
  • Bake at 350° for 40 to 45 minutes or until golden, shielding with aluminum foil during the last 10 minutes to prevent excessive browning, if necessary. Cool in dish on a wire rack 15 to 20 minutes. Serve warm with ice cream.

    *3 (14.5 ounce) cans pitted tart red cherries can be substituted. Drain cherries, reserving 1/2 cup juice. Substitute reserved juice for 1/2 cup water.

In the world of irony (where I tend to live most of my life) in Ireland, today is National Famine Memorial Day. Not sure if they celebrate by fasting or not, but I say let’s change tradition just in case and celebrate with COBBLER!
